It's simply not enough to brew a beer with at least 18.5% original gravity to call it a Doppelbock. To get the coveted -ator ending, the Doppelbock also has to be dark. Those are the rules. With our Ator, we go a bit further: a two-week fermentation process and eight weeks of aging make it particularly pleasant and well-rounded. We brewed the Innovator to unite the two churches that are our neighbors in Giesing. Because whether Catholic or Protestant, we think beer can bring people closer together.
